I got this recipe from the Hungry Girl “Clean & Hungry” Cookbook on page 280.
You’ll need: medium bowl, whisk, 10-inch skillet, non stick spray, offset spatula or flexible rubber spatula, and a plate. 🙂
1/2 cup of egg whites
1.5 T plain protein powder
1/8 t garlic powder
1/8 t onion powder
1/2 cup chopped broccoli
3 oz raw boneless skinless chicken breast, cut into bite-sized pieces
Dash each of salt & black pepper
3 T shredded reduced-fat cheddar cheese
Combine the egg whites, protein powder, garlic powder, & onion powder. Whisk!
Bring a 10 inch skillet sprayed with nonstick spray to medium heat. Pour half of the batter into the pan, quickly tilting the skillet in all directions to evenly coat the bottom. Cook until lightly browned on the bottom, about 2 minutes.
Carefully flip. Cook until lightly browned on the other side, about 1 minute.
Transfer the crepe to a plate and then repeat the process for another crepe. Cover to keep warm.
Respray skillet and add broccoli & 2 T water. Cover and cook for 3 minutes.
Add chicken, and season with salt & pepper. Cook and stir until chicken is fully cooked. Approx 4 minutes. Sprinkle cheese over the broccoli and chicken in the skillet. Cook until melted, about 1 minute.
Add the mixture to your crepe and enjoy! 🙂
