This yummy lunch idea is from Hungry Girl. I love her easy recipes!
Here’s what you’ll need!
- 3 medium zucchinis
- 1 (4 oz.) skinless chicken breast, cubed
- 1/8 tsp. onion powder
- 1/8 tsp. salt, divided
- 1/8 tsp. ground black pepper, divided
- 1/2 tsp. chopped garlic
- 1 Tbsp. butter
- 1 1/2 tsp. grated Parmesan cheese
Using a spiral vegetable slicer, cut zucchini into spaghetti-like noodles. (If you don’t have a spiral veggie slicer, peel zucchini into super-thin strips, rotating the zucchini as you slice it). Roughly chop.
Bring a skillet sprayed with nonstick spray to medium heat. Season chicken with onion powder and a dash each salt and pepper. Cook for about 8 minutes, until cooked through. Transfer to a cutting board.
Bring a skillet sprayed with nonstick spray to medium heat. Add zucchini noodles and garlic. Cook and stir until noodles are hot and slightly softened, about 3 minutes.
Add remaining ingredients to the skillet, including remaining dash each salt and pepper. Cook and stir until Spread has melted and coated zucchini noodles, about 1 minute.
Slice chicken, and serve over noodles. Enjoy!! 🙂
