Last week, I had the opportunity to eat at a cozy restaurant in Cascade, ID! I decided on “breakfast for dinner” and chose the Hawaiian Omelette. It was soooo good! I loved the mixture of the sweet pineapple with the eggs! It was smothered in cheese and I don’t think I really want to know the calorie count for that meal!
Once I got home, I decided to make a lighter version….
What I used: Pam, Egg Substitute, Deli Turkey, Fresh Pineapple Chunks, and a wedge of Laughing Cow Cheese…
I started out by spraying the pan with Pam and browning the deli turkey a little…
(6 slices of thin sliced Oscar Meyer Deli Turkey)
I added the pineapple to get the juices flowing! (about 1/2 cup of fresh pineapple chunks)
You can use regular eggs, but I think egg substitute is easier… I always use a half a cup as a serving size.
After the eggs are set… add the wedge of Laughing Cow Cheese…. it melts wonderfully!
This was JUST AS GOOD and wayyyy less calories!
