Protein Waffle {or} Pancake

The first time I tried the protein waffle, I fell in love! The reason I love it so much is that it is such a fun, quick and easy breakfast. You can change the flavor easily based on which fruit you add to the top! I have been eating these pancakes or waffles for many years and have yet to get bored. They are made with 3 main ingredients…. Oatmeal, Cottage Cheese, and Eggs! (Many people ask if you can taste the cottage cheese…. and the answer is no. I can’t stand cottage cheese normally, and I swear you can’t taste it!) Thanks to the magic bullet blender, it takes only a few seconds to blend the batter and a few minutes later breakfast is ready. I prefer the waffle version because they seem to cook better/faster…

Protein Waffle

1/3 cup dry oatmeal

1/3 cup fat free cottage cheese

1/3 cup egg whites OR egg beaters

1/2 teaspoon baking powder

1/2 teaspoon vanilla

1 T cinnamon

This process has become very routine for me, so I’ll tell you exactly what I do…

I use the 1/3 cup as a scooper and scoop out the dry oatmeal to add to the blender. Second, I use the same scoop and add the cottage cheese. Third, I pour in the egg beaters to the same scoop and add to the mix. I have a half teaspoon for the baking powder. I then add a half teaspoon of vanilla and I add the cinnamon last. (Usually about a table spoon, but I don’t measure it… ) Blend it all up…

This is the approximate amount of batter that I use for each waffle… It makes 2!

Then I top it with whatever fresh fruit I have on hand… Today, I didn’t have fresh fruit, so I thawed out some strawberries and raspberries from the freezer. I also add approx 1/8 cup of sugar free syrup. You can substitute the syrup for fat free cool whip.

**UPDATE**

I now have a large waffle maker …. and this recipe is just enough for one giant waffle! 🙂
